First flush Japanese ceremonial grade matcha powder

Ceremonial grade matcha powder is the top tier of matcha, and this one earns it. It comes from Japan, the traditional home of matcha, and from the ichibancha or first flush, the very first harvest of the year. Those young, tender leaves are picked before the summer heat stresses the plant, and the bushes are shaded for the final weeks before picking, which is what drives the vivid green colour and the natural sweetness in the cup.

Stone-ground, whole leaf

Sifted and whisked, it dissolves cleanly without clumping and holds its colour rather than dulling to olive, so it looks as good in an iced latte as it does in a traditional bowl.

How to prepare ceremonial grade matcha p

Sift 2g (one scoop) into a bowl. Add 60ml of water at around 80°C, since fully boiling water scorches the leaf
and turns it bitter. Whisk in a brisk W moti a fine foam forms. Drink as is, or top with150ml of hot or cold milk for a latte.

A slower cup
